A stone's throw from the Seine, the new address led by chef Thibault Sombardier has everything it takes to become a new German-Pratin landmark.
The Pavillon Faubourg Saint-Germain is the new signature of the family-owned and independent Chevalier Paris brand, offering Parisians and international travellers a choice refuge, true to the elegance and literary spirit of the area.
With three entrance keys on rue du Pré-aux-Clerc, the 5-star establishment has turned this 19th century building, where the memory of such illustrious tenants as James Joyce, T.S. Elliot and Léo Ferré floats, into a place of intimacy.
Located at number 1, the restaurant Les Parisiens expresses the culinary philosophy of chef Thibault Sombardier. The former Top Chef finalist, who has won over the general public as well as discerning gourmets with his 1-star restaurant Antoine, has taken up the challenge of making this address a future fixture on the Parisian scene.
The chef first immersed himself in the atmosphere of the place, a neo-brasserie setting as he likes to define it, to imagine the markers of his menu. Inside, the atmosphere is warm from the moment you enter. The rounded curves of the wide velvet benches contrast with the brass-rimmed quartzite tables, while the mosaic wave pattern creates a beautiful dynamic.
The elegance of the setting is matched by a menu that gives pride of place to the references of haute-bistronomy, dear to Thibault Sombardier. Although the chef insists that the recipes are "accessible, easy to understand, simple in appearance and precise in the background work", they nonetheless honour dishes as emblematic as the half-lobster au gratin à la Savora and its fries, the tartar, the snail ravioli, the chocolate-praline mousse or the sole meunière, executed according to the rules of the art.
A seasonal cuisine, whose products are sourced mainly in the Ile-de-France, which seduces with a lively and modern style, without denying its love of tradition. A well-balanced score, which should seduce the gastronomes of the neighbourhood... and well beyond!
